Seafood Frittata
Ingredients
- 1 tbs oil
- 1 onion, chopped
- 1 c peas and corn or peas and carrot frozen
- 1 tsp crushed garlic
- 1 tbs Dijon mustard
- 8 eggs
- salt
- pepper
- 1/2 c diced potato cooked
- 1-2 fillets fish or smoked fish
- 1 1/2 c grated cheese
Instructions
- Cook the vegetables, onion, garlic and mustard in the oil. Allow to cool a little.
- Combine together the eggs and season with salt and pepper to taste.
- Pour the mixture of eggs over the vegetables etc and cook on top for 5-6 minutes.
- Sprinkle over the cheese.
- Place under a grill and carry on the cooking until the egg is set.
- Leave in the pan for a while until a little cool then cut into wedges and serve with salad.
