Seafood Frittata
Ingredients

oil
1
onion, chopped
1
c
peas and corn or peas and carrot frozen
1
tsp
crushed garlic
1
tbs
Dijon mustard
8
eggs
salt
pepper
1/2
c
diced potato cooked
1-2
fillets
fish or smoked fish
1 1/2
c
grated cheese
Instructions
Cook the vegetables, onion, garlic and mustard in the oil. Allow to cool a little.
Combine together the eggs and season with salt and pepper to taste.
Pour the mixture of eggs over the vegetables etc and cook on top for 5-6 minutes.
Sprinkle over the cheese.
Place under a grill and carry on the cooking until the egg is set.
Leave in the pan for a while until a little cool then cut into wedges and serve with salad.
